When asked what is one of my all time favorite things to eat, the answer is potatoes. When asked what food gives me comfort the answer is soup. Merging these two things I adore has always been special for me. It’s a nostalgic treat. I have indulged in this over the years. I remember tasting Cream of Potato soup as a child and I fell in love at first bite. The flavors of creamy potato appeared along with buttery sauteed onions. A hint of garlic was instantly set in my brain as comfort food. Not even thinking to open that 2-pack of Saltines, all I needed was the spoon. I always go back to that day. My beloved cream of potato soup starts reappearing when the time of year calls for warmth. Cozy things to enjoy prompt memories of that day. I use good ole fashioned all purpose russet potatoes. I can whip up a bowl in under an hour. Here is how I make my version of comfort in a bowl, served with just a spoon.
Cream of Potato GF/DF Guilt Free Soup
So what’s it made of?
- 5 russet potatoes ( peeled and diced )
- Half of medium onion (diced)
- 1 carton or 3 cans of Chicken stock
- 2 cups of cashew/coconut milk (or milk of choice)
- 1/4 cup of extra virgin olive oil (or any butter of choice is ok )
- 1/8 teaspoon of white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt & black pepper (season as desired)
- chopped scallions/green onion ( optional but recommended if diet allows )
And then what…
Gather all of your ingredients and lets get ready to indulge in pure comfort!
- In a large pot on medium heat, add olive oil and onions. Cook for 5 minutes.
- To the pot, add potatoes and saute for 2-3 min with onions.
- Add salt black pepper and white pepper to potatoes. Mix to season potatoes in the pot.
- Turn heat down to low. Add chicken stock.
- Allow potatoes to cook 10-15 min. Lightly stir every few minutes to ensure even cooking.
- After 15 min, pierce potatoes to check if they are done. The boiled potatoes should be soft by now.
- Using an immersion blender, slowly pulse and mix in potato mixture. Be gentle so you don’t get splashed. If using a blender, allow potato mixture to cool slightly (10min) before blending so you don’t burn yourself.
- Blend for 5 minutes until smooth. Add a splash of milk (of choice) or chicken stock. Reheat in the pot on low for a few minutes more.
- Get out your favorite soup bowl or cup and serve the size your heart desires. Add scallions chives cheese bacon sour cream etc…. The possibilities are up to you. I however enjoy it as is.
